Tuna took some time to grow on me when I was a meat-eater. I love the texture, but not the smell. And then the whole idea of mercury poisoning was horrendous.
Well, I'm so glad I'm now vegan, cause I no longer have to worry about the smell, the mercury, the taste, or anything else. I can just eat it and be energized.

I've never been good at making pancakes. My pancakes have always been wonky shaped and hard, but with the help of my hubby, I finally have a pancake recipe that's semi worthy to share.

I love breakfast. And I used to love eggs. But when I discovered what it does to the body, I knew I had to make a change. Still, this was easier said than done. Honestly, it was a process to move through this and the first time I made this dish, I wasn't sure how it would turn out. Since I did, this has been a Saturday morning special that I can run to easily.
If you are new to eating vegan, I highly recommend you add some nutritional yeast to this dish. Personally, I think it tastes great on day one, but taste best on days 2 and 3 when the seasons to marinate a bit.

Beets! Beets!
Beets and I go way back! Every Sunday in my native country of Jamaica, we would drink beet and carrot juice mixed with condensed milk and nutmeg! It was like a ritual or at least it felt like it.
As soon as I became an adult, I no longer even tasted much less drink beets. I rarely ate carrots until I found out that I was allergic to dairy.
I wasn't just allergic to dairy, but wheat, corn and a bunch of other stuff that were now the main staples in my diet.
Fast forward and one day after I first because a raw vegan, I drank a-lot of beets and discovered that my poop was red.
It totally freaked me out as I had no idea a veggie could be that powerful and so quickly.
Then I had my first baby via C-section and needed to get the saline out of my blood in a hurry... The doctors told me the anesthesia would make me constipated, so I thought to myself,
"Thanks for the heads up, but no thank you"
I came home and started juicing!
